Depending on the products, it will vary between 12 months and 15 months, from the factory.

We strongly emphasize storing the products at -18°C (without fluctuations) to ensure optimal shelf life and the best final results. Respecting the cold chain is a fundamental part of the process, and products should not be refrozen once thawed.

Each oven is different, depending on the brand, usage, maintenance frequency etc. Thus, we recommend you request for an appointment with our Technical Team to give you the proper and customized answer for the best Baking Settings. But if you really need an answer, our guideline would be 170°C.

At ambient temperature : 2 hours for organoleptic reasons ; 48 hours for food safety reasons.

We have products at Bridor that you can bake frozen (kindly contact us to get to know which one because it depends on the country availability) but for the croissants, we highly recommend a thawing time of 15 to 30 minutes.

We have different ranges of products. Our best seller is our pure butter range. But we do have vegan range (thus, without butter) and also Baker Solution range, using compound butter, for accessible quality for the price.

For optimal results, we recommend using convection ovens for our viennoiserie and bread. Rotary ovens with precise temperature control can be a good option when large quantities must be baked. The deck oven is suitable for our viennoiserie and bread, but fine tuning and support from Bridor expert team is recommended to ensure optimal results.

TurboChef and Merrychef ovens type can be used to bake croissants, but only under specific programs that balance microwave, convection, and impinged air to avoid overcooking or uneven baking. These high-speed ovens are typically better suited for reheating or finishing baked goods rather than the full lamination baking process, as only few products can be bake at a time.

Also an Air fryer can be used to bake croissants, but with some limitations. Since air fryers use rapid air circulation, they can create a crisp outer layer quickly, which might not allow the interior to bake evenly if not adjusted properly.

Microwave ovens can’t be used to bake and hence are not suitable for Bridor products. TurboChef ovens, or any equipment that lacks consistent airflow and heat distribution should be avoided as these can negatively affect the texture and quality of the final product.
